Sauce pans are deep vessels with straight walls and a long handle. They are most commonly used for simmering and boiling.
Some pans have a second handle that helps when pouring.
As with most cookware, the thickness and material used to form the bottom determine much of the pan's thermal properties.
Weight is also a good indicator. A heavier pan is made from ticker metal.
